- 1 cup chicken breast finely chopped
- 1/2 cup carrots shredded
- 1 red bell pepper chopped
- 2 green onions chopped
- 2 tbsp cilantro
- 1 tbsp lemon juice
- 2 tbsp plain Greek yogurt
- 2 avocados pitted

Instructions
- In a medium bowl, mix chicken, carrots, red pepper, green onion, cilantro, lemon juice, and yogurt until well combined. Add pepper to taste.
- Spoon the chicken mixture into each avocado half and serve one avocado half per person.
- Tip: you can spoon out a bit more avocado flesh to make more room for the chicken salad!
