Chocolate Almond Baked Quinoa

  1. In a medium pot, add quinoa and 2 cups of water. Bring to a boil, cover, then reduce heat to low and simmer until water is absorbed, about 15-20 minutes.
  2. Let quinoa cool for about 5 minutes, uncover, then fluff with a fork.
  3. Preheat oven to 350 degrees.
  4. Line the bottom of an 8-inch square baking pan with parchment paper.
  5. In a blender, puree the almond milk, dates, hemp seeds, applesauce, cocoa powder, and salt.
  6. Transfer to a large bowl, then stir in the quinoa and 1/2 cup of almond meal.
  7. Transfer to the prepared pan, then scatter the remaining almond meal over the top.
  8. Bake until firmly set, about 1 hour.
  9. Set aside to cool, then carefully run a knife around the pan to loosen the edges, flip the pan over, then cut into 1 inch squares.
  10. Serve and enjoy!
