Ground Turkey Lettuce Cups
A tasty way to enjoy lean protein with fresh crunchy vegetables. You can replace the ground turkey with tofu depending on your preferences. You can prepare the savory filling and save to enjoy later in the week too! Bonus tip: save the stem of the romaine lettuce bulb, place in a cup/jar with 3 inches of water, place in a brightly lit area, change the water every other day, and the root will begin to regrow after a few weeks so you can enjoy fresh romaine lettuce again!

Instructions
  1. Heat skillet to medium- high, add 1 Tbsp olive oil, chopped garlic, and ground turkey
  2. Cook turkey for 8-10 minutes, stirring frequently and breaking apart large chunks
  3. Once cooked, set aside and mix with chopped carrots, cucumber, cilantro, and peanuts
  4. Break apart the romaine lettuce bulb to make a “cup” shape and add turkey mixture
  5. Top with hot sauce if desired and enjoy!
