  • nonstick cooking spray
  • ¼ cup packed brown sugar
  • ¼ cup whole wheat flour
  • ½ cup old fashioned oats not quick/instant oats
  • 2 Tbsp coconut oil softened
  • 1 tsp cinnamon
  • 5 cups apples honeycrisp are great balance of sweetness and tartness
  • 1 tsp lemon juice
  • ¼ cup walnuts

Instructions
  1. Preheat oven to 375 degrees. Coat 13 x 9 inch pan with cooking spray.
  2. Combine apples, 1/2 tsp cinnamon and lemon juice in a medium baking dish. Mix well, layer pan with apples.
  3. Combine oats, whole wheat flour, walnuts, brown sugar, coconut oil and 1/2 tsp cinnamon in a medium bowl, mix well.
  4. Pour oat mixture over the apple mixture.
  5. Bake for 25-30 minutes or until apples are soft, serve warm, and enjoy!
