  • 4 oz chicken (breast or two thighs)
  • 2 - 3 cups mixed vegetables: broccoli, bell peppers, water chestnuts, onions (frozen bags can make easier convenience if time is short)
  • 2 tsp olive oil
  • 2 Tbsp Coconut aminos or low-sodium soy sauce
  • 1 tsp minced garlic
  • 1 Tbsp peanuts
  • ground ginger
  • Mrs. Dash

Instructions
  1. Cut chicken into small cubes and season with Mrs. Dash
  2. Heat nonstick skillet at medium temperature and add 1 tsp olive oil
  3. Add chicken and cover with lid
  4. Cook 5-8 minutes until no longer pink in the middle
  5. Uncover and add mixed vegetables (if frozen cover again with lid to steam for 5 minutes)
  6. Add 1 tsp olive oil, coconut aminos, garlic, peanuts, and ground ginger
  7. Increase heat to medium-high and continue stirring until vegetables turn bright color (about 5 minutes)
  8. Let cool and enjoy!
