Broccoli and Shrimp Pasta

  • 6 oz shrimp (peeled, deveined, and tails cut off)
  • 2 cups nonstarchy vegetable like broccoli, zucchini, cauliflower, mushrooms (fresh or frozen)
  • 1 cup whole wheat penne pasta
  • 1/4 cup alfredo sauce
  • 1 tsp Mrs. Dash or any Italian blend spices
  • 1 tsp olive oil

Instructions
  1. Boil 4 cups of water in a pot then add penne pasta
  2. Cook until tender but still firm, about 5 minutes, strain and set aside
  3. Add 1 tsp oil to nonstick pan over medium heat, then add shrimp and cover with lid
  4. Steam for about 4-5 minutes until they turn bright pink
  5. Add broccoli to skillet with the shrimp and cook until bright green, about 4-5 minutes
  6. Add pasta, alfredo sauce, and spices to skillet and stir until evenly distributed
  7. Enjoy!
