Chocolate Peanut Butter Bites
A quick snack that is loaded with fiber, protein, and flavor! Make these ahead of time for a snack throughout the week. You can use a small ice cream scooper to make uniform bites, or have fun molding them with your hands. Ingredients
  • 1/2 cup milk (low fat or unsweetened almond/oat/soy milk)
  • 1 Tbsp raw sugar
  • 2 Tbsp natural peanut butter (smooth or crunchy)
  • 1 tsp vanilla extract
  • 1/4 cup Peanut Butter Powder
  • 1 1/2 cups old fashioned oats (not instant)
  • 1/2 cup or 2 scoops of Cornerstone chocolate protein powder
  • 2 Tbsp semisweet chocolate chips

  • 1/2 cup milk (low fat or unsweetened almond/oat/soy milk)

Instructions
  1. In a small saucepan, combine sugar and milk over medium heat. Stir and bring to a boil for 1 minute (do not over heat otherwise, milk will burn).
  2. Turn off heat and stir in peanut butter and vanilla
  3. Then add oats, peanut butter powder, protein powder and chocolate chips, stir until ingredients are well blended (mixture will be the consistency of cookie dough)
  4. Scoop mixture on waxed paper and let cool
  5. You can refrigerate it for up to 2 weeks in airtight container. Or you can freeze them for up to 30 days
