Black bean tacos
Enjoy a simple and budget friendly meal by using canned black beans, which are high in fiber, potassium, and iron!

  • 1 Tbsp olive oil
  • 6 corn tortillas
  • 3 cups chopped cabbage
  • 2 Tbsp chopped cilantro
  • 2 oz cotija cheese
  • 3 Tbsp salsa
  • 1/2 tsp garlic powder, cayenne pepper, and black pepper or ½ tsp Mrs. Dash blend

Instructions
  1. Heat olive oil in a non-stick skillet over medium temperature, strain black beans and add to skillet
  2. Add spices and cook until beans become softened (about 10 min)
  3. Heat tortillas on a separate skillet
  4. Layer tacos with black beans, cabbage, cilantro, cotija cheese, and top with preferred salsa
  5. Enjoy!
