Chicken pozole
A classic Mexican dish made with chicken to reduce saturated fats without compromising flavor!
  1. Boil 4 cups broth or water then add chicken breast
  2. Lower temperature to medium and cover with lid for 15 minutes
  3. Add zucchini, hominy, and tomatoes with green chilies and cook for 15 minutes
  4. Serve in a bowl and add 1 Tbsp cotija cheese
  5. Enjoy!
