                - 1 lb chicken (skinless and boneless)
- 1 quart of water
- 3 medium zucchinis (or 3 cups)
- 3 medium carrots (or 3 cups)
- 3 roma tomatoes (or 3 cups)
- 1 cup uncooked brown rice
- 1 tsp garlic powder or Mrs. Dash
- 1 bay leaf and mint leaf
- 3 serrano or jalapeno peppers (optional)
- 1/2 tsp salt

    Instructions
    
                - Boil water in a large pot, then lower temperature to med-high, add chicken, herbs, and spices
- Cover with a lid and cook for about 10 minutes
- Chop zucchini, carrots, tomatoes, and peppers into ¼ – ½ inch cubes
- Add rice and chopped vegetables, cover with lid and let simmer
- Cook for another 10 -15 minutes or until rice and vegetables are tender
- Enjoy!
- Note: leftovers can be saved in the refrigerator for 4 days or frozen in Tupperware for 1 month
