- 4 cups low sodium chicken broth or water
- 4 cups sliced zucchini
- 1 container (about 3 cups) hominy
- 1 can (about 1 ½ cups) tomatoes with green chilies
- 4 Tbsp cotija cheese

    Instructions
    
                - Boil 4 cups broth or water then add chicken breast
- Lower temperature to medium and cover with lid for 15 minutes
- Add zucchini, hominy, and tomatoes with green chilies and cook for 15 minutes
- Serve in a bowl and add 1 Tbsp cotija cheese
- Enjoy!
