Healthy Egg Casserole
Enjoy a warm breakfast all week by making this ahead of time. Keep refrigerated for up to 7 days and simply reheat for 1 minute.
  1. Preheat oven 375 degrees fahrenheit
  2. In a large skillet, heat 1 Tbsp olive oil, season Turkey with black pepper and garlic, cook until done, set aside
  3. Spray large baking dish with cooking spray
  4. Layer sliced potato evenly, then add zucchini, spinach, jalapenos, and top with cooked ground turkey
  5. Whisk eggs with egg whites then, season liberally with black pepper
  6. Pour egg mixture on top, then add cheese
  7. Bake for 40-45 minutes or until egg layer is cooked and slightly browning
  8. Slice into 6 pieces and enjoy!
