- 2 cups broccoli florets chopped
- 2 cups brown rice cooked
- 1/4 cup nonfat plain Greek yogurt
- 2 eggs lightly beaten
- 1/4 cup sharp cheddar cheese grated
- 1/4 tsp nutmeg

Instructions
- Preheat oven to 350 degrees. Lightly coat 8 muffin cups with cooking spray and set aside.
- Fill a medium saucepan with water, bring to boil, add broccoli, and blanch until tender, about 3 minutes. Then drain the broccoli.
- In a large bowl, combine broccoli, rice, yogurt, eggs, cheese, and nutmeg. Add pepper to taste.
- Portion the mixture evenly among the muffin cups, bake until golden, about 20 minutes.
- Let cool for 5 minutes, serve, and enjoy!
